Nut Butter Balls

In the spirit of Halloween, I shall post a candy recipe with chocolate. I've never understood the obsession with chocolate, but there are a few combinations that I can enjoy and not seem like an alien!  Nut butter and chocolate is one of them. (Mint is the other). I'm normal, I swear!!!!! (Am I?)

This version uses melted chocolate chips to make things quick, but soon I'll post a home-made cane sugar  free version for you die-hards like me that don't consume any processed white stuff.

GF Chocolate Chips
Nut butter of choice
(Optional )Coconut sugar/syrup
Almond flour if needed
Vanilla
Salt

Parchment paper
Double boiler (or just a bowl and small pot)

Gather all your ingredients. Depending on many factors, you made need only some or choose all on the list.

If you choose a nut butter that is really wet, then you will want to use plenty of almond flour to stiffen it up. If you want these candies to be on the sweet side, you can also add coconut sugar to help with the stiffening process. You need the end result to hold shape after you roll them into balls.

If you choose nut butter that comes out like this, then you will want to add some of the oil that floats to the top when you open the jar as well as a wet sweetener like coconut syrup to get it to hold together.

Add salt & vanilla to taste. I really enjoy sweet and salty together, so since the chocolate is store bought it will be sweet. I would add a hefty pinch of salt per cup.

Then roll all the "dough" into bite sized balls and place on parchment paper on a tray.

Melt your chocolate chips in a double boiler. You can see how easy that is to do if you don't have a fancy one. Just bring water to boil in a pot with a bowl suspended above.

Drop 2-3 balls in at a time and roll them around until covered. Then place back on tray.

If you have the patients, you can let them harden on their own at room temperature, but some of my clients have children and once they smell the air of chocolate, I better deliver... and FAST!

So I place them in the freezer for 10-15min. (This is where the tray comes in handy).
